| It just depends how much work/$$ you want to invest to get the (crappy?) wheels to fit. Also it depends on what size tire you want to run. ZinnZ32 is exactly correct, you'll need a 10mm spacer for the rear and a 15 mm for the front. I run an 18x10" +32 wheel on my fronts and an 18x10.5" +28 on the rears. (Note: A +38 offset is ideal for the rear, but I need a spacer to clear my brakes). Look at my profile for specs. This pic is at +38 rear offset. Since you want to run a 10" rear (not at 10.5" like me) you'll have slightly more clearance.
In regards to your questions: -Will they poke TOO much or be just right for an 18x10 +48 wheel in the front? They won't poke at all in the fronts because that's way too much offset. You will have to run a 15mm spacer and extended wheel studs (Effectively making it a +33 offset). -Will the front wheels clear the inner suspension components? I know the rears should fit without too much fender work. I'm buying a fender roller and have a heat gun, and my paint sucks, i'm not afraid to do a roll or pull. No. At +48 you will hit the inner suspension. You'll also need a roll but not a pull on both the front and rears at +32/+38. -If the car's effectively sitting about 2-2.5" lower, how should camber be affected? I can get camber arms if I need to, but if it's only like 2 degrees negative, then It should be fine, if anythign more than 2, or if it's not upright enough to get flush with the fender, I'll get the arms. I would get the arms FUCAs regardless. Z's have a front camber issue to begin with, without messing with ride height and suspension. Also, don't cut your springs. It's stupid and unsafe. Finally, your post states you found a "killer deal" on a set of wheels. It sounds like you're trying to upgrade your Z on a budget (we all are). You’re looking at about $650 ($480 for wheels, $36 for hub-centric rings, and $134 for spacers) not including shipping…plus you still need tires. For that price you’re well on your way to a decent set of coilovers or some nice FUCA’s and other suspension goodies. If it’s a ’91 it probably needs some suspension work anyway whereas wheels and tires could wait. You're burning a bunch of cash to make some marginal quality wheels fit. My two cents is to prioritize the performance items before looks.
